I started with chicken breast sides. These are the bones and meat that is left when the butcher makes boneless chicken breasts.
I cut the sides in half and put them through the meat grinder to make a sort of "chicken hamburger." This contains all the soft bones and meat and it looks very much like hamburger.
Here is a plastic container with the product of about a half dozen breast sides. I cleaned out the last bit of chicken by putting through a Fuji apple, cut in several pieces.
